Ingredients

Pastry
6oz plain flour
3oz margarine
pinch of salt
a little cold water

Mix all ingredients to form a dough. Line a dish and bake blind
(fit tin foil over pastry to stop it rising).

Filling
1 small onion
1 box of bacon pieces
2 eggs
¼ pint milk or cream
3oz grated cheese
salt and pepper
sliced tomatoes
Method
Peel and chop the onion and sautee in a little margarine with the bacon pieces. Beat the eggs, add the milk or cream and the cheese (save a little cheese for topping), and add salt and pepper. Mix all ingredients together and pour into pastry case, decorate with sliced tomatoes. Cook for 20 minutes at Gas 4, sprinkle the leftover cheese on top then cook for a further 10 minutes or until filling is set.
