Method
Combine sugar, water, mint leaves and stems in a small saucepan; bring to a
boil, simmer until sugar dissolves; cover and set aside to cool. Add grapefruit
juice, puree in a blender; strain; transfer to a shallow dish or pan; cover and
freeze until firm.
Puree again in a blender, transfer to a small bowl; cover and freeze.
When ready to serve the grapefruit mint sorbet palate cleanser, use a melon
baller and serve 1 to 3 scoops sorbet in a stemmed glass per person, garnish
with a mint sprig and serve, this is a refreshing palate cleanser.
